The Hands Behind Every Can of Laughing Gut
After graduating with a degree in hospitality management, Adam Benziger pursued his interest in fermentation science with positions in the craft beverage industry. What started as a passion for beer eventually led him somewhere he never expected: kombucha.
Adam spent years building a career around brewing, deepening his fermentation know-how through hands-on work at craft breweries and formal study in the field. But a personal health diagnosis changed the direction of that career path. The gluten in beer wasn't something his body could tolerate anymore, and that setback pushed him to look for another way to stay in the craft beverage world he loved.
He heard about kombucha, read about its probiotic properties, purchased a bottle at a local health supermarket and began brewing kombucha at home as an alternative to beer. The tea-based beverage seemed to be a perfect fit, providing Adam with the opportunity to continue doing what he did best while simultaneously supporting his gut-health.
Although gluten intolerance had derailed his original path, a slight detour turned into something bigger and better. With his parents on board as partners in the new venture, Adam launched Laughing Gut in 2018. What began as a handful of flavors sold at a single yoga festival has grown into a small-batch operation known throughout the Hudson Valley for doing kombucha differently.
Brewing: Part Art, Part Science
Brewing is both an art and a science. As with any recipe, there are basic techniques and rules to follow, but each brewer adds their own unique spin to differentiate themselves from other kombucha products on the market.
Adam strives to capture the essence of kombucha without masking its authentic tartness with sweetened fruit juices or too many competing flavors. It's a philosophy that sets Laughing Gut apart in a market where a lot of kombucha leans hard on sugar and fruit blends to soften the tang that makes the drink what it is.

No shortcuts, no masking, just the process, done right, batch after batch.
Still Hands-On, After All These Years
What hasn't changed since that first small batch is Adam's approach: whole-leaf organic teas instead of lower-quality tea bags, herbs and spices sourced locally whenever possible, and a refusal to lean on added sugar or fruit juice to do the flavor's work for it. It's the same attention to detail he brought to his fermentation training years ago, just pointed at a different glass.
Every can of Laughing Gut still carries that original idea: a health setback turned into a second career, built on the belief that a better-tasting, more honest kombucha was worth brewing.
